Lemon Cake Protein Balls
These protein balls are me begging for spring to come and stick around for a while. Spring, take off those tired old boots and slip on some new sandals. Feel the sunshine on your face. Have a lemon cake protein ball.
These little bites are naturally sweetened and bursting with creamy lemon flavor. They make a perfect breakfast or healthy treat for all you mamas anticipating donning a swimsuit in a few short weeks. And they’re an ideal grab-and-go breakfast for your kiddos (who at this point in the school year can no longer rouse themselves in time to dress and eat a sit down meal in the wee hours before 8 a.m.).
We’re an active family, and I tend to whip up a batch of protein balls for my family every other weekend or so for us to enjoy throughout our busy weeks. We’re pretty much experts at making and eating them.
For the protein component, I usually rely on some sort of nut butter and hemp seeds. But for these little gems, I incorporated Cardiotabs creamy vanilla bean whey. I’m usually a vegan protein kinda gal due to my lactose intolerance, so I tend to tread lightly with whey products. For this recipe, since I incorporated so much real lemon flavor with the juice and the zest, I wanted to make sure all the liquids were thoroughly combined. Use your food processor or hand mixer and whir together wet ingredients honey through protein powder until they’re creamy and taste how you like. Then (in a bowl) stir in the oats and rest of the dry ingredients. That way you will have creamy lemony goodness in every bite!
Wet your hands and form the ‘dough’ into golfball-sized bites. (It will be sticky at first). Store some in your fridge for now and some in your freezer for later!

Lemon Cake Protein Balls (Gluten-free)
1/2 cup honey (I used a scant 1/2 cup)
1/2 cup cashew butter
3 oz. lemon juice (this was 1 1/2 lemons for me)
zest of one lemon (or add more, to taste)
2 scoops vanilla Cardiotabs whey
2 cups oats (I like these gluten-free oats)
1/4 cup shredded unsweetened coconut
1/4 cup cashews
3 teaspoons coconut flour
1 teaspoon hemp seeds
