Chocolate Chip Cookie Ice Cream Sandwiches
The only thing better than a scoop of ice cream is a scoop nestled between two of Nana’s Homemade Chocolate Chip Cookies and rimmed with rainbow sprinkles to make a homemade ice cream sandwich.
This is the family chocolate chip cookie recipe passed down by my mom (Nana) that my kids can now make all by themselves. To make it extra-special, we sometimes indulge in our cookies sandwich-style. They’re the perfect summer treat and ideal for celebrating National Ice Cream Sandwich Day on August 2 or National Ice Cream Day on the third Sunday in in July.

Lay out a platter of (cooled) cookies, shallow dishes of sprinkles and a few varieties of ice cream and let your party people create the ice cream sandwich of their dreams!

Ingredients
1 cup (2 sticks) butter
1 cup sugar
1 cup brown sugar
2 eggs
½ tsp. vanilla extract
½ tsp. almond extract
2 ½ cups oatmeal, processed in a blender to make oat flour
2 cups white flour
½ tsp. salt
1 tsp. baking powder
1 tsp. baking soda
12 oz. chocolate chips
Instructions
Preheat oven to 375 degrees. Cream together butter and sugars with a mixer. Add eggs, vanilla and almond extracts. Mix in dry ingredients, combining well. Finally, add the chocolate chips. Refrigerate dough for at least 30 minutes, to overnight to allow dough flavor to develop.
Form dough into golf-ball sized balls, and press slightly to flatten a bit on top. Place dough balls two inches apart on a silicone-lined baking sheet (or a greased baking sheet).
Bake at 375 degrees for nine minutes. After allowing to cool on cookie sheets for two minutes, transfer to wire racks to cool completely. It’s very important that your cookies are completely cool when you begin making your sandwiches!
To assemble ice cream sandwiches, set out a plate of cookies, ice cream and a shallow dish of sprinkles. Top a cookie with a generous scoop of Belfonte Premium Vanilla Bean Ice Cream, and press another cookie on top. Roll rim of sandwich in sprinkles, or spoon sprinkles over rim of your sandwich.

Make ahead-tip: Ice cream sandwiches can be prepared ahead of time and stored, individually wrapped, in your freezer for a few days. However, it is preferable to prepare ice cream sandwiches and enjoy immediately so that your cookie retains a wonderful, squishy texture.
